TLT (TOFU, LETTUCE & TOMATO) SANDWICH

Ingredients

3 slices extra firm tofu (3.5 oz)

3 tbsp soy sauce

1 tsp dark soy sauce

1 tsp honey (or agave)

Lettuce, as needed

2 slices tomato
-
Avocado mousse (see page..)

2 bread slices

3 tbsp oil

Mix together the honey and soy sauces to create the marinade. Add the tofu to the marinade and let it rest for at least 20 minutes, flipping every 3-5 minutes.

Preheat a pan over medium heat and add the oil. Dry off the tofu and place it in the pan. Fry for about 1 ½-2 minutes on each side or until browned. Remove the tofu from the pan and place it on a napkin to remove any excess oil.

While the tofu is cooking, toast two slices of bread of your choice.

To assemble the sandwich, spread a small thin layer of avocado mousse on the bottom slice. Layer the tofu, lettuce, and tomato on top. Spread another tablespoon of avocado mousse on the top slice of bread. Top the sandwich and serve.
TIP
For best results, make your tofu more firm by setting it on a thick layer of paper towels in the refrigerator overnight. This will help remove some of the excess water and result in a firmer texture. This sandwich was inspired by the classical BLT sandwich. The flavors are sweet, and salty. It has a nice balance of acidity. The sandwich can always turn into a classical BLT with substituting the tofu for bacon.
